Chicory

Cichorium intybus. Chicory is a tap-rooted perennial with blue flowers that is native to Europe and western Asia. It is very adaptable and drought tolerant, making it useful for reclamation. Chicory roots can be used as a coffee substitute, and many varieties are cultivated for salad leaves. Bees, flies and butterflies are common visitors.
